One ingredient, a different moment

I have a cooking note about when to add yogurt to curry. It describes a thicker, softer texture when the yogurt went in near the end, and a looser broth when it went in earlier.

That was enough to make timing interesting. The same ingredient can enter a recipe at different moments, and those moments give it different amounts of time in the pan.

The note leaves plenty open. It does not record matching quantities, temperatures, or cooking times. I can't use it to separate the effect of timing from everything else that might have changed. What I have is an observation worth returning to.

For another attempt, I'd like to split one batch before adding the yogurt, keep the amount the same, and change the timing. Then I'd write down what I actually notice about the texture and taste, even if the difference is smaller than I remember.

That is the appeal of a kitchen notebook for me. Dinner can be dinner, and it can also leave behind a good question.
